| If you like cheese I'll
like to tell you my favourite dish. It's an "Vorarlberg
traditonal dish" and it's called "Kaesspaetzle" or "Kaesknoepfle"
Ingredients: for 4 persons 500 g of flour 3 eggs little bit of salt water or milk 300 g of different kind of cheese (strong, spicy, mild) 1-3 onions pepper Preparation: Mix flour, eggs, salt in a bowl and pour water (milk) into it until it gets a thicker to medium consistency. In the meantime boil water, add a little bit of oil and salt. Now press the dough through a special kind of sieve which is called "Spaetzlehobel". Wait some seconds until the little dumplings are floating on top of the water. It's time now to take them out and put them on a bigger plate or dish (bowl) and spread the mixture of cheese on them. Repeat several times until there is nothing left. On top of the "Spaetzle" you spread fried onoins and a little bit of melted butter. Put the plate into the warm oven and wait for another some minutes. Then the "Spaetzle" are ready to be served. As a side plate: lettuce or other kind of salads like tomatoes, cucumbers, potatoes, etc. Now enjoy your meal, bon appetite or "An reacht an guata Mitanand!" as we say here in Vorarlberg, Austria. |
